DUM ALOO

Dum Aloo or Aloo Dum is a potato based dish. The dish originally was a traditional Kashmiri cuisine. In the original dish, the potatoes are usually small and are first deep fried and then cooked slowly at low flame in a gravy with spices. Now, Dum Aloo is a popular recipe cooked throughout India and is very popular.

Ingredients:

  • Whole small aloo (8 pieces) or regular medium aloo each cut to 4 pieces and peeled – 8 pieces total
  • Oil/ Desi Ghee – 1 tablespoon
  • Bay leaves (Tez Patta) – 2 leaves
  • Salt – to taste
  • Red chili powder – as per your taste
  • KwikMeal Bhuna Masala – 2 1/2 tablespoon
  • Water – 1 1/2 cup
  • Homemade garam masala – 1 pinch
  • Cilantro (Dhania patta), chopped – 1 tablespoon
  • Heavy whipping cream (Optional) – 2-3 Table spoon
  • Kaju paste (optional) – 1 table spoon or as per desired thickness

Preparation:

  • Deep fry aloo till golden brown
  • Heat wok (Kadhai) on medium flame, oil/Ghee, when heated add bay leaves
  • When bay leaves change color, add  KwikMeal Bhunna Masala
  • Add red chilli powder and stir for 1 – 2 minutes
  • Add the previously fried aloo to the wok and fry for 2 or 3 minutes
  • Add water
  • Bring it to boil and add salt
  • Cover pan and cook on medium low flame till aloo is soft or fully boiled
  • Add kaju paste (optional) and boil for 2 – 3 minutes
  • Turn off flame

After turning off flame you could add ONE of these optional items to enhance taste (Do not use all)

  1. Homemade garam masala (only small cardamom, cinnamon & cloves coarsely ground) and desi ghee only if you are using oil. No need to add desi ghee if you have cooked the dish in desi ghee
  2. Cilantro
  3. Homemade garam masala (only small cardamom, cinnamon & cloves coarsely ground) and heavy Whipping Cream

Your dish is now ready. Enjoy with Roti, Puri, Nan, Paratha or Rice.
