RAJMA

Rajma is a popular North Indian dish consisting of red kidney beans, onion, garlic and spices in a thick gravy usually served with rice. Rajma chawal as it is known, is everyone’s favorite in North India and also in other parts of India. Some of the best Rajma are said to be grown in the Jammu region of J&K.

Ingredients:

  • Cooked rajma ( For cooked rajma, soak rajma – 2 1/2 cups, overnight. Boil/pressure cook rajma till soft. Mash 1/4 quantity for thick gravy.) –
  • Oil/Desi ghee – 2 tablespoon
  • Bay leaves (Tez patta) – 2 leaves
  • KwikMeal Bhunna Masala – 2 1/2 tablespoon
  • Red Chilli Powder – as per taste
  • Salt – as per taste
  • Water to adjust thickness
  • Homemade garam masala / regular garam masala (optional) – 1/2 teaspoon
  • Cilantro (Dhaniya Patta), chopped – 1 table spoon
  • Lemon/Lime juice – 1 1/2 table spoon or as per taste

Preparation:

  • Add oil/desi ghee to pan and heat on medium flame
  • Add bay leaves and let bay leaves change color
  • Add KwikMeal Bhunna Masala (add more or less Masala depending on the quantity of rajma)
  • Add chili powder and stir for 1-2 minutes
  • Add the cooked rajma to the mix in the pan
  • Add water to adjust thickness and salt
  • Bring it to boil
  • Add garam masala and lime/lemon juice
  • Let it simmer (medium low) till it reaches to desired level of gravy
  • Garnish it with cilantro before serving

Enjoy with basmati rice. Some people enjoy it with roti or nan.
